Lemon Apple Crunch

(Ready in about 20 minutes | Servings 2)  

1 cup graham wafer crumbs
1/4 cup sugar
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon cinnamon, ground Rind and juice of
1 lemon
1 teaspoon vanilla essence
3 tart apples, sliced
1/4 cup butter, melted
2 cups water   

Butter a baking dish. Combine graham wafer crumbs with
sugar, nutmeg, cinnamon, juice and rind of lemon,
as well as vanilla essence.

Then, in the baking dish, alternate layers of apples and
crumbs.  Pour melted butter over the layers; cover baking
dish with an aluminum foil.

Pour the water into the cooker; then, place the trivet at the
base. Place the baking dish in prepared pressure cooker.

Cover with the lid and bring to pressure; lower the heat and
cook for 15 minutes.  Allow pressure to drop naturally.

Afterwards, loosen the foil.
Serve in individual serving dishes.
